Oh, Kale! I’m sure you’ve all heard about it. It’s kind of a huge deal. Beyond its large variety and unreal health benefits—its versatility makes it one of the most talked about vegetables ever.
You can work with Kale in just about in any way (steam, fry, bake, stew, sauté)—but kale can also be enjoyed raw in a salad.
If you’re going to substitute kale in place of any other salad green–then try massaging your kale leafs five minutes before hand. It makes a world of difference.
Massage your kale leaves in just a few tsps of olive oil and salt. Just as you would if you were making Kale Chips. You’ll notice a bit of shrinking and also softening of the kale. The softening of the kale makes it much much easier to eat.
Directions & Ingredients: To 2 cups of Kale (you can use any kind)–mix a small handful each of raspberries, blueberries and strawberries. Add ¼ cup of feta cheese. Mix with 1 tbsp of olive oil and ½ tbsp of balsamic vinegar. Finish with just a pinch of sugar.
Perfect side dish to any patio meal.
