Whole Wheat Banana Pancakes

I adore breakfast in bed . Especially when it’s something this delicious. These light & fluffy pancakes not only taste great–but they’ll leave you with tons of energy.  Yes, they are not as satisfying as those rich buttery buttermilk pancakes we all love– but, they are half the cals and fat and double the fiber and protein. And that my friends–is better.

Whole Wheat Banana Pancakes

2 very ripe bananas
2 eggs
1/2 cup of whole-wheat flour
2 Tbsp Quick Oats
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 cup milk ( I use non fat)

Oil spray

Directions:

1. Place the bananas, eggs, flour, oats, baking soda, salt and milk in a blender. Blend for about 30 seconds until all the ingredients are combined. Please be careful not to overmix!

2. Coat a non-stick pan with oil. Add about ¼ of a cup of pancake mix and cook over medium heat until it’s lightly browned on one side.

3. Flip and cook similarly .

4. Repeat. Top with all of which your heart desires.

I defeated the purpose of eating healthy pancakes by topping mine with a ton of  maple syrup :D. But—if you wan’t to be more strong willed than me then try substituting syrup for honey or peanut butter—or both.
