Happy Valentines everyone! I hope your day is filled with lots of love and maybe these delicious Lemon Cupcakes with Pink Cream Cheese Frosting!
I was selling these cupcakes at Grand Cafe this week and they ended up being enjoyed by many, so I thought I would share the recipe just in time for Valentines day, in case you wanted to indulge in them with your loved one.
Ultra Lemony Cupcakes with Cream Cheese Frosting
For the Cupcakes:
3 cups light all-purpose flour
2 cups sugar
10 ml baking powder
zest of 2 lemons
dash of salt
1 cup (2 sticks) unsalted butter, cut into 1-inch cubes
1 cup whole milk ( I use 3.2 %)
1 ½ tbsp lemon juice
1 tsp. pure vanilla extract
1 tsp lemon extract
4 Tbsp unsalted butter
4 cups confectioners sugar sifted
¼ tsp pure vanilla extract
6 ounces cream cheese
For the Cupcakes:
Preheat 325 F.
1.Combine the flour, sugar, bakingpowder, lemon zest and salt on low speed in an electric mixer until just combined.
2.Add in the butter, mixing until just coated with the flour mixture.
3. Now grab a large bowl and whisk together the eggs, milk, lemon juice, vanilla and lemon extract . With a mixer of medium speed add the wet ingredients in 3 parts, being sure to scrape down the sides of the bowl before each addition. Beat until all the ingredients are well incorporated but please be careful not to overbeat.
4. Divide batter evenly along cupcake liner, filling up to about 2/3rd full. Bake 17-20 minutes or until the cupcakes pass the tooth pick test. Cool the cupcakes completely and top with the cream cheese frosting. I used a star tip to create my rose design.
5. For the frosting place all ingredients in the bowl and mix initially on low speed. Once the powdered sugar is slight incorporated, mix the frosting on high speed for about 2 minutes or until light and fluffy.
