Good for you Peanut Butter Granola Bars

I ridiculously love granola bars. I think it’s the Canadian in me. I miss going to the grocery store and being in the granola bar aisle for a good half  hour just staring at all the glorious options. Europe doesn’t share the same love for granola bars—kids don’t get them in their lunch boxes and women don’t carry them in their purses. They just aren’t a thing here.

Devastating, right? Anyways, I decided to take matters into my own hands by making my own granola bars—healthy ones, too!

These Peanut Butter Granola Bars are not only delicious but also insanely good for you –loaded with goji berries, coconut flakes and assorted nuts (sunflower seeds, pecans and walnuts). They require no sugar or oil and get their sweetness naturally from agave and pureed dates. Oh, and the best part about them? They require no baking!

 

INGREDIENTS
adapted from Minimalist Baker

1 cup packed dates (raisins can be used to for a more convenient and cheaper option)
1/4 cup agave + 2 tbsp  (you can use honey too )
1/4 cup + 2 tbsp creamy peanut butter
¼ cup pecans
¼ cup walnuts
¼ cup of sunflower seeds
1 1/2 cups rolled oats
handful of goji berries
handful of coconut flakes

 

METHOD

1.Process dates in a food processor until small bits remain (about 1 minute) until you reach a dough like consistency.

{Optional step: Toast your oats in a 350 degree oven for 15-ish minutes or until slightly golden brown. This is optional! But I do prefer the toasted taste }

2.Place oats, nuts and dates in a bowl – set aside.

3. Heat up honey and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout.

4. Once thoroughly mixed, transfer to an 8×8 dish or other small pan lined with plastic wrap or baking paper so you can lift them out easily .

5.Press down until uniformly flattened. Cover with parchment or plastic wrap, and let set in fridge or freezer for 15-20 minutes to harden.

6. Remove bars from pan and chop into even bars. Store in an airtight container for up to a few days.  Enjoy!
