Ultra Fluffy Buttermilk Pancakes

This Sunday was all about good food and good company.

And there’s nothing better to share with company you love than these ultra fluffy Buttermilk Pancakes loaded with vanilla whipped cream and fresh strawberries.

Every bit was worth waking up early for.

This is by far my favourite buttermilk pancake recipe.  You can just go ahead now and toss any other recipe you may have in mind out  🙂 —because these pancakes turn out great every single time, even when doubling or tripling the recipe.

 

Ultra Fluffy Buttermilk Pancakes
Recipe adapted from Buns in My Oven.

1 cup all purpose flour
2 tablespoons sugar
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla
1 egg
2 1/2 tablespoons butter, melted

DIRECTIONS:

Combine the flour, sugar, cinnamon, nutmeg, baking powder, baking soda, and salt in a large mixing bowl.
In a small bowl, mix together the buttermilk, vanilla, egg, and melted butter until well combined.
Pour the wet ingredients into the dry and whisk together until most of the lumps are gone. Be careful not to overmix!
Heat a large skillet over medium heat and spray with cooking spray.
Pour 1/4 cup of batter into the skillet and cook until bubbles form on the surface. Flip the pancake and cook until lightly  browned on the bottom

If you don’t make buttermilk just combine one cup of milk with 1 tsp of white vinegar and let sit for about 5 minutes.

To my Polish readers : you can find buttermilk as maślanka in any grocery store.
