If you like shortbread cookies, you must try these. They literally melt in your mouth.
They are light and have just the perfect touch of strawberry and lemon to each bite. They were that combination of sweet and tart that I was craving. For a long time.
Short Bread Recipe:
1 cup of Butter
1/4 cup of Cornstarch
1/2 cup of Icing Sugar
1/2 cup of Flour
Lemon Cream Cheese Frosting
Preheat the oven to 375 degrees F (190 degrees C).
Whip butter with an electric mixer until fluffy. Stir in the confectioners’ sugar, cornstarch, and flour. Beat on low for one minute, then on high for 3 to 4 minutes
Drop cookies by spoonfuls 2 inches apart on an ungreased cookie sheet. Then gently press down on each cookies. Top each with a sliver of strawberry ( or your desired berry)
Bake for 10-13 minutes in the preheated oven. Watch that the edges don’t brown! In the short bread world- this means over-baked! Your cookies should look under-baked-even when they are done. Mine were a little over cooked heheh.
In the meantime start on the Lemon frosting by beating 1/2 cup (1 stick) softened butter and 1 tub (250 g) Cream Cheese together in large bowl with electric mixer on medium speed until well blended. Gradually add 4 cups icing sugar and 4-1/2 tsp. lemon juice, beating until light and fluffy after each addition. Finish with a zest of lemon.
