Friends, sorry for my lack of posts this week! Microbiology has been really hurting my relationship with the kitchen. But in other news, A and I just booked our tickets for Greece and I am so looking forward to a break from med school!
I’ve been eating very clean lately in preparation of my coming trip—and I wanted to share with you guys one of my favourite clean-eatin’ recipes. These Sweet Potato and Zucchini Fritters are so good you’ll forget you’re eating healthy.
Ingredients:
2 small zucchini
2 small white sweet potatoes, peeled
1/2 medium onion, peeled
1 egg, beaten
1/4 cup white whole wheat flour
½ tsp salt
1 tsp chilli powder
1 tsp onion powder
1 tsp cayenne pepper
freshly ground pepper, to taste

Method:
Coarsely grate the vegetables and toss with the salt. Let sit for 10 minutes and then strain through a cheesecloth, or use paper towels. Make sure you squeeze out all the water. Combine the vegetables with the egg, flour, and spices.
Grease skillet and scoop about 2 Tablespoons of the mixture for each patty. Press patties flat in the pan and cook about 3 – 4 minutes per side. Drain on a paper towel-lined plate.
I served my fritters with pulled pork on the side. Simply delicious !
