Mexican Quinoa Burgers w/ Avocado Salsa

Friends, i’m currently writing to y’all from Chania, Greece! It’s BEAUTIFUL here and I wish you were all here to experience it all with me.

Don’t worry though , i’ve been eating enough calamari, cuttle fish and souvlaki for all of us :).


In other news, lets talk about these insanely good Mexican Quinoa Burgers that I was suppose to launch the recipe for about a month ago (oops!).  Better late than never, i guess.


I think you all will love these burgers. They are not only delicious but so filling too! And the best part about them is that they satisfy those dangerous burger cravings with less than half the calories. 


Mexican Quinoa Burgers

1 medium onion, chopped
1 red pepper, chopped
3 cloves garlic, minced
1 cup cooked black beans, drained and rinsed
½ cup canned corn
1 ½ cups cooked quinoa
½ cup cheddar or pepper jack cheese
2 tablespoons taco seasoning
1 teaspoon smoked paprika
2 tablespoons salsa
2 large eggs, beaten
1 cup breadcrumbs
Oil for cooking

 Avocado Salsa

1/2 avocado, peeled and diced
1 tbsp (15 mL) diced tomatoes
1 tbsp (15 mL) minced red onions
2 tsp (10 mL) extra-virgin olive oil
2 tsp (10 mL) lemon juice
1 pinch salt
1 pinch pepper


Burger Directions:

1.Oil  a skillet and on medium heat, add onion and pepper and cook until tender – about 10 minutes. Now add in the garlic and cook for just one more minute. Remove from heat and transfer to a large bowl.

2. In the food processor, combine ¼ cup of beans and ¼ cup of quinoa. Process until well blended. Add to the bowl with the onion mixture and stir in remaining beans and quinoa, cheese, taco seasoning, paprika and salsa. Mix until combined and add in eggs and breadcrumbs. Mix well. Form into patties.

3.  At this point you can either decide to refrigerate the patties for around 25-30 minutes (this helps them hold together better) or you can just go ahead and cook them on medium heat until browned, flipping once.

Avocado Salsa Directions:

In bowl, mix together avocado, tomato, onion, oil, lemon juice, salt, pepper. Makes about ½ cup.


These Mexican Quinoa burgers are served great in a lettuce bun with a side of oven baked sweet potato fries ! YUM.
