It’s 32 degrees in Vancouver today. HOLY CRAP. And as much as I want to complain about it too – I just don’t think I have the right. Actually no Vancouverite has the right—and that’s because we spend all year complaining about the rain. So now that the sun is here—even at a brutal 32 degrees, we gotta love every ounce of it.
At least this crazy hot weather brings our my inner salad lover. If you’re like me and the warm weather makes you crave salads—I think this Kale salad will be just what you need.
Peaches, Watermelon & Feta Kale Salad.
½ peach sliced
½ cup watermelon diced
1 cup leafy kale
1 tbsp candied walnuts
1 tbsp feta
1 Small Orange cut in half
Orange juice to cover (about 1 cup)
1 Diced Shallot
1 tablespoon Whole Grain Mustard
1 tablespoon Honey
¼ cup Sherry Vinegar
½ cup Olive Oil
1.Add sliced peaches, watermelon, candied walnuts , kale and feta to a bowl. Toss with vinaigrette.
2. Orange Vinaigrette: Heat a small sauce-pan to medium add the orange cut side down and allow to caramelize until golden. Add the juice and reduce to a syrup like consistency and cool to room temperature. Once cooled, add all except the oil to a blender and puree until smooth then drizzle in the oil and adjust the seasoning.
This Kale salad is bursting with summer flavours of peaches, watermelon and feta. There’s also some gorgeous candied walnuts tossed it there too for some crunch. It’s light, summery and refreshing.
A nice way to cool down with the sun. Right!?
